What IS freeze drying anyways?

Freeze-dried candy starts as regular candy. It goes through a special process to remove all moisture! First, the candy gets frozen solid, then it's placed in a strong vacuum chamber. In this vacuum, the frozen water turns directly into vapour—skipping the liquid phase entirely. This is called sublimation. It's the same process that would happen to ice in outer space! THE FUTURE IS MEOW, ok this technology has been around for a minute, but it was primarily used in pharmaceuticals, not this time 'big pharma'! We're using it for snackin!
